Ingredients

The ingredients are:
  • 1 kilogram large carrots, cut into 5cm pieces
  • 1/2 cup butter
  • 3 tablespoons honey
  • 2 garlic cloves chopped
  • Salt and pepper
  • Fresh parsley or chives chopped for garnish

How to Make

  • Step 1: Preheat the oven to 425 degrees Fahrenheit.

  • Step 2: Using a medium saucepan add the butter and cook over medium high heat; whisk for a few minutes until the butter starts to become frothy and brown; once the butter is browned, add in the honey and garlic and remove from heat.

  • Step 3: In a large bowl add the carrots and drizzle the sauce on top of carrots and toss until carrots are evenly coated; spread carrots evenly on a large baking sheet & season with salt and pepper.

  • Step 4: Cover carrots with foil and bake for approx 10 minutes; after this time remove the foil, gently toss the carrots and bake carrots uncovered for an extra 5-10 minutes to brown the carrots until they are tender and roasted.

  • Step 5: Transfer to a serving dish and garnish with chopped parsley. Serve immediately.
