Step 1: Preheat the oven to 425 degrees Fahrenheit.
Step 2: Using a medium saucepan add the butter and cook over medium high heat; whisk for a few minutes until the butter starts to become frothy and brown; once the butter is browned, add in the honey and garlic and remove from heat.
Step 3: In a large bowl add the carrots and drizzle the sauce on top of carrots and toss until carrots are evenly coated; spread carrots evenly on a large baking sheet & season with salt and pepper.
Step 4: Cover carrots with foil and bake for approx 10 minutes; after this time remove the foil, gently toss the carrots and bake carrots uncovered for an extra 5-10 minutes to brown the carrots until they are tender and roasted.
Step 5: Transfer to a serving dish and garnish with chopped parsley. Serve immediately.
