Step by Step Method

Step 1

Cook pinto beans in sauce pan with water, onions and jalapenos.

Step 2

Season to taste.

Step 3

Cook until all liquid is absorbed; don't burn.

Step 4

Mash with potato masher until a paste.

Step 5

Thin with a little water, if needed.

Step 6

Crumble chorizo into the mix and mix evenly.

Step 7

Heat oil in large frying pan.

Step 8

Add chorizo mix, continuously stirring until mixture is thoroughly cooked and begins to bubble.

Step 9

Taste to correct seasoning.

I'll just say this... my husband said these were the best pinto beans he's ever had. They are totally different than any beans I've ever made (or eaten). Flavorful but easy to make. Made for the AmaZ'ing Race 2023 (Oaxaca, Mexico).
