  • 1/2 cup water
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 jalapeño pepper, seeded, minced
  • 1 tablespoon onion, minced
  • 1 tablespoon oil
  • 1/4 pound Mexican chorizo

How to Make

  • Step 1: Cook pinto beans in sauce pan with water, onions and jalapenos.

  • Step 2: Season to taste.

  • Step 3: Cook until all liquid is absorbed; don't burn.

  • Step 4: Mash with potato masher until a paste.

  • Step 5: Thin with a little water, if needed.

  • Step 6: Crumble chorizo into the mix and mix evenly.

  • Step 7: Heat oil in large frying pan.

  • Step 8: Add chorizo mix, continuously stirring until mixture is thoroughly cooked and begins to bubble.

  • Step 9: Taste to correct seasoning.
