Step by Step Method
Step 1
Combine eggplant, tomatoes, zucchini, onion, green pepper and garlic.
Step 2
Add remaining ingredients except parsley and toss until well mixed.
Step 3
Divide mixture into 6 portions.
Step 4
Wrap each in 16 inch square of heavy duty foil and fold with a double fold leaving a space for expansion. Seal ends.
Step 5
Place packages on one side of barbecue grill over medium to high heat.
Step 6
Cook, turning once, 30 minutes or until zucchini is tender. Remove from heat.
Step 7
Cut an X in top of package and roll back corners.
Step 8
Sprinkle with parsley.
