Step 1: Combine eggplant, tomatoes, zucchini, onion, green pepper and garlic.
Step 2: Add remaining ingredients except parsley and toss until well mixed.
Step 3: Divide mixture into 6 portions.
Step 4: Wrap each in 16 inch square of heavy duty foil and fold with a double fold leaving a space for expansion. Seal ends.
Step 5: Place packages on one side of barbecue grill over medium to high heat.
Step 6: Cook, turning once, 30 minutes or until zucchini is tender. Remove from heat.
Step 7: Cut an X in top of package and roll back corners.
Step 8: Sprinkle with parsley.
