"This sharp and fruity red sauce is delicious with all kinds of chocolate confections. It should be kept on the tart side to balance the sweetness of the dessert. It will keep in the refrigerator for 3 days or frozen for 6 months."

Step by Step Method

Put the raspberries and sugar in a bowl.

Leave for at least 1 hour to allow the flavors time to develop.

Blend the fruit and sugar to purée in a food processor (or beat with a whisk).

Rub the mixture through a fine sieve into a bowl, and press as much of the juice through as possible.
