Step 1: Put the raspberries and sugar in a bowl.
Step 2: Leave for at least 1 hour to allow the flavors time to develop.

Step 4: Blend the fruit and sugar to purée in a food processor (or beat with a whisk).

Step 6: Rub the mixture through a fine sieve into a bowl, and press as much of the juice through as possible.

Step 11: Blackberries can be used instead, but increase the sugar.
