Rainbow Sprinkles Yellow Cake
"A basic, easy to make sprinkles cake (confetti, funfetti) from standard pantry ingredients instead of a box. This is a pretty typical cake around my house at birthdays and celebrations. You can dye the batter or use specific colored sprinkles to fit in with different holidays and themes. You can use more sprinkles, if you want it really colorful (or your kids have no restraint)."

Step by Step Method
Step 1
Preheat oven to 350°F. Grease cake pan.
Step 2
Mix dry ingredients (except the sprinkles) together in a large mixing bowl.
Step 3
Add oil, milk and vanilla extract. Mix well.
Step 4
Add eggs one at a time, mixing them into the batter (or you can whisk them separately and add to the bowl, but I like to avoid dishes)
Step 5
Mix until combined; do NOT overmix the batter.
Step 6
Fold in the sprinkles.
Step 7
Bake in a greased cake pan (9"x13") for 35 minutes or until a test toothpick inserted in the center of the cake comes out clean.
Step 8
Cool completely prior to icing/frosting (use any icing/frosting you like).
