Quick Lemon Pie

Step 1

Preheat oven to 325 degrees F.

Step 2

Beat egg yolks in medium bowl with mixer, gradually beat in sweetened condensed milk and lemon juice. Pour into crust.

Step 3

Bake 30 to 35 minutes or until set. Remove from oven. Cool 1 hour. Chill at least 3 hours.

Step 4

Before serving, spread whipped topping over pie. Store leftovers covered in refrigerator.

Chef shapeweaver's photo today sent me straight to my pantry to be sure I had what I needed to make your pie. It could not have been easier & the outcome was great (excellent flavor & ideal texture). The only mistake I made was asking my DH to take it out of the oven for me. On the way from the oven to the counter, he dropped the pie! BUT it landed on the counter (a mess, but mostly intact). So your great pie became a great trifle & we loved it. :-)

I made this recipe on 7/21/13 for the "Billboard Recipe Tag Game" in Games Forum. I made the recipe exactly as it was written,and it turned out just as I had hoped.Both my SO and myself thought it had exactly the right amount of tartness.
