Step by Step Method

Step 1

Place milk, 1 cup sugar, lemon juice, lemon peel, baking mix, eggs and butter in blender or food processor. Blend 2-3 minutes.

Step 2

Pour batter into buttered 10 inch pie plate.

Step 3

Bake at 350 degrees 40-45 minutes or until center of pie is set.

Step 4

Sprinkle with 1/2 teaspoon sugar over top of baked pie, place under broiler until lightly golden.

Step 5

Cool and serve with whip cream.

I have had other flavors in impossible pies, but never lemon. Loved it. It is a mellow lemon flavor, not sour like lemon merengue pie. I think it would be good as a lime pie, also.
