Step by Step Method
Step 1
Soak bran in hot water at least 10 minutes to soften it. Drain very well, pressing to remove excess moisture.
Step 2
Combine all ingredients except wheat germ in bowl.
Step 3
Stir just to blend, about 10-20 seconds, ignoring lumps.
Step 4
Spoon into lightly oiled muffin tins.
Step 5
If using wheat germ, sprinkle it on top of muffins.
Step 6
Bake at preheated 400' for 10-15 minutes or till done.
