  • ½ cup unprocessed bran
  • 1 tablespoon sugar
  • ½ teaspoon baking soda
  • 2 teaspoons baking powder
  • ½ teaspoon ground cinnamon
  • 2 tablespoons vegetable oil
  • ½ cup cooked or canned pumpkin
  • 1 egg
  • 3/4 cup orange juice
  • 1/3 cup dark or golden raisins
  • 1 tablespoon wheat germ (optional)

How to Make

  • Step 1: Soak bran in hot water at least 10 minutes to soften it. Drain very well, pressing to remove excess moisture.

  • Step 2: Combine all ingredients except wheat germ in bowl.

  • Step 3: Stir just to blend, about 10-20 seconds, ignoring lumps.

  • Step 4: Spoon into lightly oiled muffin tins.

  • Step 5: If using wheat germ, sprinkle it on top of muffins.

  • Step 6: Bake at preheated 400' for 10-15 minutes or till done.
