Step by Step Method
Step 1
Preheat oven to 350 degrees F. Grease or line muffin tins. Make the streusel first. For streusel; in a small bowl combine flour, sugar and cinnamon; using your fingers mix in butter until mixture is crumbly; set aside.
Step 2
In large bowl combine first five ingredients and set aside. In medium bowl, combine eggs with pumpkin, and oil. Add liquid ingredients to dry ingredients. Stir JUST until moistened. Stir in apples.
Step 3
Spoon batter into greased or paper lined muffin cups filling them 3/4 full. Sprinkle streusel topping over each muffin batter. Bake muffins for about 18-25 minutes until done --- for 6 giant muffins, increase baking time to 40 or 45 minutes.
