Pulled Pork BBQ Tot Casserole

"Tater tots, pulled pork, BBQ sauce, and cheese ... what's not to love. I couldn't find a recipe that made it this way, so here it is for the internet."

Slow cook pork shoulder and pull. You'll need just 2 lb for this recipe.
Cook tater tots according to instructions, leave the oven on afterwards.
Soften the onion in a cast iron pan (12") with some oil and salt.
Scoop out the onion and reserve the pan.
Put half the tots in the bottom of the pan.
Layer on the pulled pork. (Microwave first if refrigerated.)
Thin the BBQ sauce with vinegar, ketchup, or other liquid so it is more pourable.
Pour sauce over top, then cheese, then the onions.
Top with the rest of the tots, press in slightly.
Bake at 375 until bubbly around the edges.
