Step 1: Slow cook pork shoulder and pull. You'll need just 2 lb for this recipe.
Step 2: Cook tater tots according to instructions, leave the oven on afterwards.
Step 3: Soften the onion in a cast iron pan (12") with some oil and salt.
Step 4: Scoop out the onion and reserve the pan.
Step 5: Put half the tots in the bottom of the pan.
Step 6: Layer on the pulled pork. (Microwave first if refrigerated.)
Step 7: Thin the BBQ sauce with vinegar, ketchup, or other liquid so it is more pourable.
Step 8: Pour sauce over top, then cheese, then the onions.
Step 9: Top with the rest of the tots, press in slightly.
Step 10: Bake at 375 until bubbly around the edges.
