Ingredients

The ingredients are:
  • 1 bag (2 pound) tater tots
  • 18 ounces barbeque sauce
  • Vinegar
  • 1 cup shredded cheddar cheese
  • 1 onion, diced (large onion)
  • 2 pound pork shoulder roast (pulled pork shoulder)

How to Make

  • Step 1: Slow cook pork shoulder and pull. You'll need just 2 lb for this recipe.

  • Step 2: Cook tater tots according to instructions, leave the oven on afterwards.

  • Step 3: Soften the onion in a cast iron pan (12") with some oil and salt.

  • Step 4: Scoop out the onion and reserve the pan.

  • Step 5: Put half the tots in the bottom of the pan.

  • Step 6: Layer on the pulled pork. (Microwave first if refrigerated.)

  • Step 7: Thin the BBQ sauce with vinegar, ketchup, or other liquid so it is more pourable.

  • Step 8: Pour sauce over top, then cheese, then the onions.

  • Step 9: Top with the rest of the tots, press in slightly.

  • Step 10: Bake at 375 until bubbly around the edges.
