Step by Step Method
FOR THE PULLED PORK
Step 1
Rub the smoked salt into the pork by first polking holes in it, then rubbing it all over with the salt. Place the roast into a crock pot, then add the orange quarters and the garlic. Put the lid on and cook on high for 6 hours. Add the rum halfway through and place the lid back on.
Step 2
When it's finished cooking, remove any excess fat and shred the pork with a fork.
FOR THE SANDWICH ASSEMBLY
Step 3
In a colander or a salad spinner, salt the shredded cabbage, mixing it together. Let this sit for 1 hour, afterwards rinsing or spinning out the extra water. Put it into a bowl with a lid, adding the vinegar and the sugar. Mix it together and put the lid on. Refrigerate it for at least 30 minutes.
Step 4
Slice the 2 loaves of banana bread to your preferred thickness, buttering both sides of each piece. Next, heat a skillet to medium- high. Cook the slices on each side, browning them.
Step 5
When they're cooked, place pulled pork and coleslaw on a piece of bread. Then place another piece of bread on top of that. Repeat for the number of sandwiches desired.
NOTE: When choosing your banana bread, make sure it will be firm enough to hold up as a slice and not fall apart. Some breads are cakeier than others
