FOR THE PULLED PORK


Step 1

Rub the smoked salt into the pork by first polking holes in it, then rubbing it all over with the salt. Place the roast into a crock pot, then add the orange quarters and the garlic. Put the lid on and cook on low for 12 hours. Add the rum halfway through and place the lid back on.

Step 2

When it's finished cooking, remove any excess fat and shred the pork with a fork.

FOR THE SANDWICH ASSEMBLY


Step 3

In a colander or a salad spinner, salt the shredded cabbage, mixing it together. Let this sit for 1 hour, afterwards rinsing or spinning out the extra water. Put it into a bowl with a lid, adding the vinegar and the sugar. Mix it together and put the lid on. Refrigerate it for at least 30 minutes.

Step 4

Slice the 2 loaves of banana bread to your preferred thickness, buttering both sides of each piece. Next, heat a skillet to medium- high. Cook the slices on each side, browning them.

Step 5

When they're cooked, place pulled pork and coleslaw on a piece of bread. Then place another piece of bread on top of that. Repeat for the number of sandwiches desired.

NOTE: When choosing your banana bread, make sure it will be firm enough to hold up as a slice and not fall apart. Some breads are cakeier than others
