"This delicious dish is perfect for company, because it makes an impressive presentation even though it's super easy to make. Also great for weeknight dinners."
Preheat oven to 350 F.
Heat 2 tablespoons of the oil in a heavy-bottomed frying pan. Add the onion, celery, and carrot and cook over low heat for 10 minutes, or until soft.
Add the garlic, cook for 2 minutes, then add the chopped tomato, passata, oregano and sugar. Simmer for about 10 minutes, stirring occasionally, until reduced and thickened. Season to taste.
To make the breadcrumbs, chop the bread in a food processor for a few minutes, until fine crumbs form.
Arrange the fish in a single layer in a baking dish. Stir the chopped parsley and the lemon juice into the sauce. Season to taste and spoon over the fish. Scatter the breadcrumbs all over the top and drizzle with the remaining oil.
Bake for 20 minutes, or until the fish is just cooked.
