Step by Step Method
Step 1
Quarter the quince and then cut them into wedges (about 1 inch wide), discard peels
Step 2
In a saucepan over medium heat add the wine along with the next 2 ingredients (-cloves) and bring to a simmer. Stir in the quince and then lay a piece of parchment paper over the top; cover pan and simmer for 30 minutes.
Step 3
Stir in prunes and cherries and cook, uncovered for 30 minutes or until quince are cooked through and dried fruit is tender.
Step 4
Using a slotted spoon, remove fruit to a compote dish. Simmer remaining liquid (in pan) until about 1/2 cup remains. Pour mixture over the fruit; cover; refrigerate.
