Ingredients

The ingredients are:
  • 4 quince (you need 3 cups of cut up quince -- if not enough add more dried fruit or sliced pears)
  • 3 cups Riesling or other white wine or 2 cups wine plus 1 cup water
  • 1/2 cup honey (orange blossom honey suggested)
  • Tangerine zest
  • 2 cloves
  • 10 prunes
  • 1/3 cup dried cherries

How to Make

  • Step 1: Quarter the quince and then cut them into wedges (about 1 inch wide), discard peels

  • Step 2: In a saucepan over medium heat add the wine along with the next 2 ingredients (-cloves) and bring to a simmer. Stir in the quince and then lay a piece of parchment paper over the top; cover pan and simmer for 30 minutes.

  • Step 3: Stir in prunes and cherries and cook, uncovered for 30 minutes or until quince are cooked through and dried fruit is tender.

  • Step 4: Using a slotted spoon, remove fruit to a compote dish. Simmer remaining liquid (in pan) until about 1/2 cup remains. Pour mixture over the fruit; cover; refrigerate.
