Step 1

In skillet heat butter. Add onions; cook until translucent. Add mushrooms, then brown lightly. Remove from pan.

Step 2

Mix the egg mixture, then add to pan; cook.

Step 3

Add onions, mushrooms and tomatoes on one side, flip over other side.

Step 4

Dust with a sprinkle of herbes de Provence on top, then plate.

What a great and filling breakfast this made, the only change I made was to use only 2 large eggs for 1 serve and found it very satisfying though I am a sucker for mushrooms in omelettes and have never had one I haven't enjoyed. Thank you dienia b, made for Billboard Recipe Tag Game.
