Step 1: In skillet heat butter. Add onions; cook until translucent. Add mushrooms, then brown lightly. Remove from pan.
Step 2: Mix the egg mixture, then add to pan; cook.
Step 3: Add onions, mushrooms and tomatoes on one side, flip over other side.
Step 4: Dust with a sprinkle of herbes de Provence on top, then plate.
