  • EGG MIXTURE
  • 3 large eggs
  • 1 tablespoon water
  • Salt, pinch
  • Pepper, pinch
  • 1/4 teaspoon herbes de Provence
  • FILLING
  • 1/4 cup yellow onion, sliced
  • 1 tomato, sliced
  • 1 tablespoon butter
  • 1 whole mushroom (sliced)

How to Make

  • Step 1: In skillet heat butter. Add onions; cook until translucent. Add mushrooms, then brown lightly. Remove from pan.

  • Step 2: Mix the egg mixture, then add to pan; cook.

  • Step 3: Add onions, mushrooms and tomatoes on one side, flip over other side.

  • Step 4: Dust with a sprinkle of herbes de Provence on top, then plate.
