Step by Step Method

Step 1

Preheat oven to 325 degrees.

Step 2

Bring a kettle of water to a boil.

Step 3

In a medium saucepan, bring half-and-half just to a boil.

Step 4

Remove from heat.

Step 5

Place eggs,vanilla, sugar, and salt in a medium bowl.

Step 6

Beat until light, then whisk in chocolates.

Step 7

Temper this mixture with hot cream

Step 8

Whisking constantly, gradually add hot half-and-half mixture.

Step 9

Skim any foam from surface.

Step 10

Divide mixture among four (6-ounce) custard cups, and place in a 9x13 baking dish

Step 11

Place in oven, and pour enough boiling water in dish to come halfway up sides of cups.

Step 12

Drape a sheet of aluminum foil over top of baking dish (do not seal).

Step 13

Bake custards until just set but still slightly wobbly, 40 to 45 minutes. Remove cups from casserole pan

Step 14

Refrigerate until chilled,overnight
