President Obama's Spiced Pumpkin Soup
"From a fundraiser that I've adapted for my taste. They had a cup of celery root, I'm using celery. Their spices were rough mine are ground. They used Mutsu or Granny Smith apple. Garnish with diced candied ginger, seasoned ricotta and toasted pumpkin seeds, if desired no amounts given. I'm doing vegan so add if you wish."

Step by Step Method
Step 1
Place a large stew pot over moderate heat.
Step 2
Add the oil and heat until it shimmers.
Step 3
Add all the spices and cook for 1 minute.
Step 4
Add garlic, onion, carrots, celery and ginger.
Step 5
Continue to cook until soft and tender.
Step 6
Add apples and the vegetable stock and bring up to a boil.
Step 7
Add the pumpkin puree, cider vinegar, celery salt and pepper and cook 20 minutes until vegetables are soft.
Step 8
Puree with a stick blender

You could strain through a soup strainer if you wish, but why?
Step 10
Season to taste with salt and pepper.
