Ingredients

The ingredients are:
  • 4 tablespoons oil
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon ground allspice
  • 1/8 teaspoon ground cloves
  • 1/8 teaspoon ground cumin
  • ½ teaspoon ground turmeric
  • 3 cloves garlic, smashed
  • 1 cup onions, diced
  • 1 cup carrots, diced
  • 1 stalk celery, diced
  • 1 tablespoon fresh ginger, grated
  • 1 cup apple, peeled, diced
  • 8 cups vegetable stock
  • 2 cups pumpkin puree
  • 2 tablespoons apple cider vinegar
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon celery salt

How to Make

  • Step 1: Place a large stew pot over moderate heat.

  • Step 2: Add the oil and heat until it shimmers.

  • Step 3: Add all the spices and cook for 1 minute.

  • Step 4: Add garlic, onion, carrots, celery and ginger.

  • Step 5: Continue to cook until soft and tender.

  • Step 6: Add apples and the vegetable stock and bring up to a boil.

  • Step 7: Add the pumpkin puree, cider vinegar, celery salt and pepper and cook 20 minutes until vegetables are soft.

  • Step 8: Puree with a stick blender

  • Step 9: You could strain through a soup strainer if you wish, but why?

  • Step 10: Season to taste with salt and pepper.
