Step 1: Place a large stew pot over moderate heat.
Step 2: Add the oil and heat until it shimmers.
Step 3: Add all the spices and cook for 1 minute.
Step 4: Add garlic, onion, carrots, celery and ginger.
Step 5: Continue to cook until soft and tender.
Step 6: Add apples and the vegetable stock and bring up to a boil.
Step 7: Add the pumpkin puree, cider vinegar, celery salt and pepper and cook 20 minutes until vegetables are soft.
Step 8: Puree with a stick blender
Step 9: You could strain through a soup strainer if you wish, but why?
Step 10: Season to taste with salt and pepper.
