President Carter's Coconut Rice
"I'm not sure if this is like the recipe President Carter likes, but it's written he likes Coconut Rice. So I'm going with it. This had 1/2 teaspoon sugar but I don't think the Carter's added any."

Step by Step Method
Step 1
Combine coconut milk, oil, water, and salt in a medium saucepan (or rice maker) .
Step 2
Stir in rice.
Step 3
Bring to a boil over medium heat. (turn on rice maker)

Cover, reduce heat, and simmer until rice is tender and liquid is absorbed,20 minutes. Be careful this burns easily, that's why I like rice cooker lol
Step 5
Take off heat still covered and let set 5 minutes.
Step 6
Fluff.
Step 7
Season to taste.

Garnish:

Heat coconut in 350 degree oven until brown but not burnt 10 minutes.
Step 10
Top rice with herbs and coconut.
Step 11
Garnish with toasted coconut and chopped cilantro.
