Step 1: Combine coconut milk, oil, water, and salt in a medium saucepan (or rice maker) .
Step 2: Stir in rice.
Step 3: Bring to a boil over medium heat. (turn on rice maker)
Step 4: Cover, reduce heat, and simmer until rice is tender and liquid is absorbed,20 minutes. Be careful this burns easily, that's why I like rice cooker lol
Step 5: Take off heat still covered and let set 5 minutes.
Step 6: Fluff.
Step 7: Season to taste.
Step 8: Garnish:
Step 9: Heat coconut in 350 degree oven until brown but not burnt 10 minutes.
Step 10: Top rice with herbs and coconut.
Step 11: Garnish with toasted coconut and chopped cilantro.
