Ingredients

The ingredients are:
  • 14 ounces unsweetened coconut milk (1 can)
  • 1/4 teaspoon salt
  • 12 ounces jasmine rice, (1 1/2 cups)
  • 1 1/4 cups water
  • 1 teaspoon coconut oil
  • Garnish
  • 1/4 cup unsweetened coconut flakes
  • 1 tablespoon cilantro, minced

How to Make

  • Step 1: Combine coconut milk, oil, water, and salt in a medium saucepan (or rice maker) .

  • Step 2: Stir in rice.

  • Step 3: Bring to a boil over medium heat. (turn on rice maker)

  • Step 4: Cover, reduce heat, and simmer until rice is tender and liquid is absorbed,20 minutes. Be careful this burns easily, that's why I like rice cooker lol

  • Step 5: Take off heat still covered and let set 5 minutes.

  • Step 6: Fluff.

  • Step 7: Season to taste.

  • Step 8: Garnish:

  • Step 9: Heat coconut in 350 degree oven until brown but not burnt 10 minutes.

  • Step 10: Top rice with herbs and coconut.

  • Step 11: Garnish with toasted coconut and chopped cilantro.
