Step by Step Method
Step 1
Place the butter into a large saucepan over medium-low heat.
Step 2
Once melted, add the onion and season lightly.
Step 3
Sweat for 2 to 3 minutes.
Step 4
Add the garlic and curry powder continue to sweat for an additional 1 to 2 minutes, making sure not to allow onions or garlic to brown.
Step 5
Add the peas, chicken broth and parsley .
Step 6
Increase heat to high and bring to a boil.
Step 7
Reduce heat to low, cover and cook at a simmer until the peas are tender and not holding their shape any longer, approximately 45 to 50 minutes; adjust seasoning as needed.
Step 8
If you want a smooth soup, use a stick blender, puree the soup until the desired consistency.
Step 9
Watch out for hot splatters.
