Step 1: Place the butter into a large saucepan over medium-low heat.
Step 2: Once melted, add the onion and season lightly.
Step 3: Sweat for 2 to 3 minutes.
Step 4: Add the garlic and curry powder continue to sweat for an additional 1 to 2 minutes, making sure not to allow onions or garlic to brown.
Step 5: Add the peas, chicken broth and parsley .
Step 6: Increase heat to high and bring to a boil.
Step 7: Reduce heat to low, cover and cook at a simmer until the peas are tender and not holding their shape any longer, approximately 45 to 50 minutes; adjust seasoning as needed.
Step 8: If you want a smooth soup, use a stick blender, puree the soup until the desired consistency.
Step 9: Watch out for hot splatters.
