Step by Step Method

Step 1

Preheat oven to 200C/180C fan forced.

Step 2

Line a large baking tray with baking paper.

Using scissors, trim bread to form a large square and cut into 16 squares and place, in a single layer on the prepared baking tray and then spray with oil and season with salt and pepper and then bake for 6 minutes or until golden and crisp.

Scoop avocado into a bowl and roughly mash and then add 1/2 the lemon juice and season to taste and stir to combine.

Step 5

Place hummus in a separate bowl and add remaining lemon juice and stir to combine.

Step 6

Spread each pita crisp with avocado then the hummus mixture and then arrange crisps on a large platter and top with prawns, radish and watercress and sprinkle with sumac and serve.
