Step 1

To make seafood sauce, combine all ingredients in a small bowl and mix well and set aside.

Step 2

Peel 8 prawns, leaving tails intact, and devein and set aside to garnish and then peel and devein remaining prawns and cut in half.

Step 3

Shred lettuces(you’ll need 4 cups) and place in a large bowl with halved prawns, avocado and radishes and toss gently.

Step 4

Divide half the prawn mixture among eight glass serving dishes (2-cup capacity) and drizzle evenly with half the cocktail sauce, about 1 tablespoon in each and repeat with remaining prawn mixture and cocktail sauce.

Step 5

Garnish cocktails with reserved prawns.
