Ingredients

The ingredients are:
  • 1.5 kilograms cooked shrimp (48 cooked tiger prawns specified)
  • 2 baby cos lettuces
  • 3 avocado (ripe, peeled and chopped)
  • 5 radish, whole (cut into matchsticks)
  • FOR SEAFOOD SAUCE
  • 1 cup mayonnaise ( whole-egg)
  • 1/3 cup tomato sauce
  • 1 tablespoon lemon juice
  • 2 tablespoons horseradish cream
  • 1 teaspoons Worcestershire sauce
  • Salt, to taste
  • Pepper, to taste

How to Make

  • Step 1: To make seafood sauce, combine all ingredients in a small bowl and mix well and set aside.

  • Step 2: Peel 8 prawns, leaving tails intact, and devein and set aside to garnish and then peel and devein remaining prawns and cut in half.

  • Step 3: Shred lettuces(you’ll need 4 cups) and place in a large bowl with halved prawns, avocado and radishes and toss gently.

  • Step 4: Divide half the prawn mixture among eight glass serving dishes (2-cup capacity) and drizzle evenly with half the cocktail sauce, about 1 tablespoon in each and repeat with remaining prawn mixture and cocktail sauce.

  • Step 5: Garnish cocktails with reserved prawns.
