Potato Salad -Big Batch

"This is salad I make when I am serving a large crowd, it feeds about 40 to 50 people depending how many other sides you are serving. For my American neighbors the Best Food brand mayonnaise is the same as our Canadian Hellman’s brand mayonnaise listed in this recipe. Serve this salad cold and do not leave this out at room temperature for any longer then 2 hours."

Step 1

Mix together all the ingredients, using only 4 cups of mayonnaise adding more of the mayonnaise as needed.

Step 2

Refrigerate for a few hour before serving. I make this in the morning to allow the flavours to meld together nicely.

I cut this down to a quarter of the recipe and made per recipe. It's very good and I plan to make it as stated for my next catering function. Mustard and mayonnaise were right on, which I was happy about.
