"By trial and error my DH and I came up with this yummy potato side dish. We have it as a side with burgers .You can sub parmesan or romano cheese for the Asiago if you can find it."

Step by Step Method

Step 1

Pre-heat oven to 400 degrees F

Step 2

Line a cookie sheet with baker's parchment paper and spray with Pam.

Step 3

Slice the potato with a mandolin about 1/8 of an inch thick and place slices on the parchment paper lined cookie sheet in one layer.

Step 4

Then spray potato slices with Pam.

Step 5

Sprinkle potato slices with cheese, salt and optional pepper.

Step 6

Bake in oven on center rack for about 15 minutes. If you cut potatoes thinner, then check it at 10 minutes.

Step 7

Remove from oven and serve immediately. Enjoy!

Made for the "What's on the Menu" Tag Game - I made 3 versions - 2 w/cheese (Mozzarella & Gouda) & 1 w/just oil & herbs. I took the cheesy chips out of the oven when the cheese was melted. The Gouda worked best & both were tasty, but I hoped for crisp like a real chip so I left the herbed chips in the oven to cook longer. In what seemed like an instant, they were burned to a CRISP! My bad & no fault of the recipe. I did feel that garlic was missing & will be sure to include it for a 2nd try. I will get this right! :-)

I subbed Parmesan and used black pepper instead of cayenne, These were tasty and easy to make. I would leave then in a bit longer next time to crisp them up more, but they were done in the given time. Great with a turkey burger patty.

Delightful! I didn't have red potatoes or cayenne so I substituted with white potatoes and red pepper flakes.

OH MY ! these are sooo good, I used jalepeno white cheddar that turned orange when baked, haha!! wonderful side to go with our buffalo turkey burgers. Like others have said , you could really play around with these for all kinds of different flavours. we loved them and will be making them again!

Oh wow, are these good!!!! Mine only needed 7 minutes in the oven as they were sliced quite thin. This recipe is GREAT as is but, you could also have fun with this by adding your favourite herbs or spices or even playing around with different dips to dunk these in. Thanks for posting this recipe here. Made for the Billboard Recipe Tag game.
