Step by Step Method

Step 1

Place pork in slow cooker and then add next six ingredients (onion - garlic). Cook on low for 6-8 hours. Shred meat with two forks.

Step 2

Stir in hominy and adobo sauce and cook on low for 30 minutes.

I've never made this dish before (any version of it) so I don't have anything to compare it to -- but it was delicious! It was easy to put together for the crock pot this morning before I left for work and simple to finish when I got home with the hominy and the adobe. It wasn't too spicy, which I appreciated. The kids used this as a taco/burrito filling. The pork was TENDER and easy to shred with two forks.
