The ingredients are:
  • 3 pounds pork loin
  • 2 yellow onions (chopped)
  • 1 can (15 ounce) green enchilada sauce
  • 4 cans (4 ounce) green chilies (chopped)
  • 1 can (15 ounce) chicken broth
  • 1/2 teaspoon oregano
  • 8 garlic cloves, minced
  • 1 can (32 ounce) hominy, undrained
  • 2 1/2 tablespoons chipotle adobo sauce (from can of chipotle peppers)

How to Make

  • Step 1: Place pork in slow cooker and then add next six ingredients (onion - garlic). Cook on low for 6-8 hours. Shred meat with two forks.

  • Step 2: Stir in hominy and adobo sauce and cook on low for 30 minutes.
