"Can add a can of navy beans. They use Portuguese sausage; if you are lucky and able to find it, use it. A very simple soup, they use fresh kale, I'm using frozen. They use 2 varieties of potatoes in some recipes, use what you have."

Step by Step Method

Step 1

Heat 3 tablespoons oil in a large stockpot over medium heat.

Step 2

Add onion and sausage, brown lightly.

Step 3

Add garlic and paprika and cook for 3 minutes.

Step 4

Add potatoes and cook, stirring constantly for 3 minutes.

Step 5

Pour in broth and bring to a boil

Step 6

Turn down to simmer.

Step 7

Simmer gently until potatoes are very tender, about 20 minutes.

Step 8

Add kale and beans if you are using.

Step 9

Simmer 10 more minutes.

Step 10

Season to taste.

I LOVE this soup, so yeah, I had to make it and was it ever Delicious! Followed as written, except for pureeing the potatoes and onion before adding the chourico and kale (so didn't sautee the sausage ahead, given that it was a beautifully smoky chourico sausage that added a ton of flavor). Yumma, yumma, I love this stuff that I grew up on and filled the belly, satisfying my soul. Thanks, Dee, for sharing.
