Step 1: Heat 3 tablespoons oil in a large stockpot over medium heat.
Step 2: Add onion and sausage, brown lightly.
Step 3: Add garlic and paprika and cook for 3 minutes.
Step 4: Add potatoes and cook, stirring constantly for 3 minutes.
Step 5: Pour in broth and bring to a boil
Step 6: Turn down to simmer.
Step 7: Simmer gently until potatoes are very tender, about 20 minutes.
Step 8: Add kale and beans if you are using.
Step 9: Simmer 10 more minutes.
Step 10: Season to taste.
