  • 1 cup onion, minced
  • 1 clove garlic, minced
  • 1/2 teaspoon paprika
  • 12 ounces smoked sausage
  • 2 pounds potatoes, peeled, diced
  • 8 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper, to taste
  • 12 ounces frozen kale (1 package)

How to Make

  • Step 1: Heat 3 tablespoons oil in a large stockpot over medium heat.

  • Step 2: Add onion and sausage, brown lightly.

  • Step 3: Add garlic and paprika and cook for 3 minutes.

  • Step 4: Add potatoes and cook, stirring constantly for 3 minutes.

  • Step 5: Pour in broth and bring to a boil

  • Step 6: Turn down to simmer.

  • Step 7: Simmer gently until potatoes are very tender, about 20 minutes.

  • Step 8: Add kale and beans if you are using.

  • Step 9: Simmer 10 more minutes.

  • Step 10: Season to taste.
