Step 1
Partially slit tenderloins lengthwise, being careful not to cut all the way through. Place tenderloins in zippered plastic bag; set aside. In a small saucepan, combine jelly, lemon juice concentrate, soy sauce, oil, and ginger root.
Step 2
Cook and stir until jelly melts; reserve 3 tablespoons. Carefully pour jelly mixture over tenderloins and seal bag. Refrigerate 4 hours or overnight.
Step 3
Preheat the oven to 350-degrees F.
Step 4
Combine the apple, bread crumbs, celery, pecans, and reserved jelly mixture in small bowl. Place tenderloins in baking dish; spoon apple mixture into the slits of the tenderloins. Bake for 30 minutes. Loosely cover and bake for 10 minutes longer or until meat thermometer reaches 160 degrees F. Garnish with apple wedges and parsley, if preferred.
