"You've got leftover Baked Potatoes,or too many cooked and diced and you're not sure what to do with them.This recipe just might be what you're looking for. This also uses leftover cooked & diced pork.Now this is just for one or two,so if you need more adjust accordingly.As usual with all my recipes,adjust seasoning according to your own tastes. Step by Step Method

Step 1

Pour oil to a cast iron,over medium and heat oil until hot but not smoking.

Step 2

Add potatoes and peppers,then sprinkle seasonings over the vegetables, cover with lid and stir occasionally until potatoes are lightly browned,and peppers are slightly softened.

Step 3

Now add diced pork and cook until pork is heated through.

Step 4

Serve as a side with your favorite style cooked eggs.

This is a great way to use up leftover pork and potatoes. I made this with leftover grilled pork chops and canned potatoes for hubby's lunch. He enjoyed the oregano in this dish. Thanks for sharing your recipe here.
