Ingredients

The ingredients are:
  • 1/4 cup oil (vegetable oil)
  • 1 1/2 cups cooked potatoes, diced (leftover potatoes, just a bit smaller than bite size)
  • 3/4 cup cooked pork, diced
  • 1/3 cup sliced bell peppers (green,red,yellow or whatever color you choose)
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon oregano

How to Make

  • Step 1: Pour oil to a cast iron,over medium and heat oil until hot but not smoking.

  • Step 2: Add potatoes and peppers,then sprinkle seasonings over the vegetables, cover with lid and stir occasionally until potatoes are lightly browned,and peppers are slightly softened.

  • Step 3: Now add diced pork and cook until pork is heated through.

  • Step 4: Serve as a side with your favorite style cooked eggs.
