Step by Step Method
Step 1
Heat the oven to 350° Fahrenheit.
Step 2
In a skillet, put in a tablespoon of oil. Sear the meat on each side for about a minute per side on medium heat.
Step 3
Put the roast in a shallow baking pan with a rack.
Step 4
Mix together the mustard, marjoram leaves, and salt and rub over the entire surface of the roast.
Step 5
Roast for 20 minutes per pound or until a thermometer reads 145°.
