Step by Step Method

Step 1

Preheat oven to 350 degrees F.

Step 2

Beat egg whites until stiff.

Step 3

In another bowl, beat egg yolks until thick and lemon colored.

Step 4

Add corn, seasonings and cream.

Step 5

Fold in stiffly beaten egg whites.

Step 6

Melt butter in cast iron skillet.

Step 7

Pour in egg mixture, and cook slowly over low heat. When omelet is brown on the bottom, place in a moderate oven (350 degrees F) and bake 10 to 15 minutes or until firm on top.

Step 8

Remove from oven.

Step 9

Fold and serve immediately.
