  • 4 egg yolks
  • 4 egg whites
  • 12 ounces whole kernel corn, chopped fine, drained (1 can)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper, to taste
  • 4 ounces light cream (1/2 cup)
  • 2 tablespoons butter

How to Make

  • Step 1: Preheat oven to 350 degrees F.

  • Step 2: Beat egg whites until stiff.

  • Step 3: In another bowl, beat egg yolks until thick and lemon colored.

  • Step 4: Add corn, seasonings and cream.

  • Step 5: Fold in stiffly beaten egg whites.

  • Step 6: Melt butter in cast iron skillet.

  • Step 7: Pour in egg mixture, and cook slowly over low heat. When omelet is brown on the bottom, place in a moderate oven (350 degrees F) and bake 10 to 15 minutes or until firm on top.

  • Step 8: Remove from oven.

  • Step 9: Fold and serve immediately.
