Step 1: Preheat oven to 350 degrees F.
Step 2: Beat egg whites until stiff.
Step 3: In another bowl, beat egg yolks until thick and lemon colored.
Step 4: Add corn, seasonings and cream.
Step 5: Fold in stiffly beaten egg whites.
Step 6: Melt butter in cast iron skillet.
Step 7: Pour in egg mixture, and cook slowly over low heat. When omelet is brown on the bottom, place in a moderate oven (350 degrees F) and bake 10 to 15 minutes or until firm on top.
Step 8: Remove from oven.
Step 9: Fold and serve immediately.
