Step by Step Method

Step 1

Soak the beans overnight covered in water.

Step 2

Add in remaining ingredients and simmer for 4 hours, covered.

Step 3

Add water as needed.

Step 4

Uncover and simmer for 1 hour to reduce liquid.

Step 5

Remove the ham hock and cut up the meat from the bone and add to the beans.

Step 6

Season to taste.

Step 7

Add more oregano if needed.

Ten stars all the way!!! These beans are so fantastically good! As suggested, I did add more oregano than called for, as well as double the garlic. The finished beans have a definite kick from the hatch chiles and chili powder - so if you're sensitive to "spicy" you might want to cut back a bit. The smokiness from the ham hock sure adds to the flavor, and I was wishing for a larger ham hock for more shredded meat. In any case, these are on my Best of 2024 list. Thanks for sharing, Dee!
