Step 2: Add in remaining ingredients and simmer for 4 hours, covered.
Step 3: Add water as needed.
Step 4: Uncover and simmer for 1 hour to reduce liquid.
Step 5: Remove the ham hock and cut up the meat from the bone and add to the beans.
Step 6: Season to taste.
Step 7: Add more oregano if needed.
