  • 1 pound dry pinto beans
  • 6 cups water
  • 8 ounces ham hock (1)
  • 1/2 cup onion, minced
  • 4 ounces chopped green chilies (1 can)
  • 1 teaspoon dried oregano
  • 2 cloves garlic, smashed
  • 1 teaspoon salt, to taste
  • 1/2 teaspoon pepper
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder

How to Make

  • Step 1: Soak the beans overnight covered in water.

  • Step 2: Add in remaining ingredients and simmer for 4 hours, covered.

  • Step 3: Add water as needed.

  • Step 4: Uncover and simmer for 1 hour to reduce liquid.

  • Step 5: Remove the ham hock and cut up the meat from the bone and add to the beans.

  • Step 6: Season to taste.

  • Step 7: Add more oregano if needed.
