Step 1

Heat olive oil in 4-quart Dutch oven with cover.

Step 2

Add pork and cook until lightly browned.

Step 3

Add onion and garlic and stir with meat

Step 4

Add flour and stir 1-2 minutes.

Step 5

Add tomatoes, green chilies, jalapeno , salt, pepper and sugar.

Step 6

Mix to incorporate.

Step 7

Add broth.

Step 8

Lower heat. Cover pot and simmer for 1- 1 1/2 hours until meat is tender.

Step 9

Serve with flour tortillas.

This was a great stew! I used mild chiles, but will use medium next time. We were recently in Hatch and they were roasting peppers, but we had no way of bringing them home, so I used canned Hatch green chiles and served it over rice. I ate at the Pink Adobe with my parents long ago - good memories! Thanks for posting!
