Step by Step Method

Step 1

In a large bowl, combine rub ingredients. Rub mixture all over ribs, cover and refrigerate up to 24 hours.

Step 2

In a saucepan, combine sauce ingredients. Bring to a boil, then simmer, stirring occasionally, until reduced and syrupy, 25 to 30 minutes.

Step 3

Heat grill to medium, 325°F to 350°F. Place ribs over direct heat and grill 10 to 15 minutes per side, tuning once.

Step 4

Transfer ribs to foil and brush with sauce. Loosely close the foil. Place ribs back on grill, turning off burners directly below, close lid and cook with indirect heat for approximately 90 minutes, until ribs are very tender and internal temperature reaches a minimum of 200°F. Cut ribs into portions to serve

Daily Inspiration

We enjoyed the flavor of this sauce a lot; although I really cut way back on the jalapeno (just our preference). I cooked the sauce for the recommended timeframe, but it didn't reduce much or thicken up. When the ribs were nearly done, we brushed the sauce on them. Nice flavor. Our ribs were prepared in our smoker and then transferred to the oven vs. using our grill.
